How to make perfect baked chicken: Season one chicken breast with salt and pepper on both sides. Heat 1 tablespoon coconut oil in a cast iron skillet over high heat. When it starts to smoke, remove pan from heat and add chicken to hot pan. Add pan back to flame, reducing heat to medium-high. Cook for 2-3 minutes without moving to sear the chicken.
