A study from Canada’s McMaster University (partly funded by  Dairy Farmers of Canada) put women on several different diets (lower protein, low dairy; lower protein, medium dairy; higher protein, high dairy) and found they all lost the same amount of weight — but that the higher-protein, high-dairy group lost the most belly fat while also gaining and holding onto the most muscle mass. “It seems… increasing calcium and protein in the diet may help to further promote loss of fat from the worst storage area in the body,” said Andrea Josse, lead author of the study.
Fat metabolism is the most efficient way to produce energy, allowing you to go and go and go without burning through a ton of calories. But efficiency is the enemy of fat loss. To lose body fat, you want to churn through calories—calories from carbs, calories from fat, calories from anything—and you get there through carb metabolism. “The more energy-demanding the work, the more likely you are to lose body fat,” Zimmerman explains.

• If you’re in a caloric deficit: you’ll be better off choosing foods that are low in energy density and high in nutrient density. These foods will help keep you full when calories are low. Saturated fats in food will pack on more visceral fat than polyunsaturated ones, according to a 2014 Swedish study. When subjects ate 750 more calories daily for seven weeks, either in the form of palm oil (saturated) or sunflower oil (polyunsaturated), the former gained more visceral fat while the latter gained more muscle mass and less body fat. The study authors believe different fat types can impact both the way your body forms fat and stores it. Based on your results, a specialist will determine if you burn fat well or not. When you’re cutting calories, it can be tough to make sure you’re still getting enough of all the good stuff your body runs on. “Nutrient deficiencies can stall or halt weight loss,” says Crandall. She sees lots of patients with low levels of vitamin D, for example, a nutrient that is critical to parathyroid hormone function—it helps with weight regulation. If you’re not eating a well-balanced diet, a multivitamin can be a good way to bridge those nutritional gaps and make sure you’re not missing anything that could impede weight loss or muscle building, such as calcium or iron.
Since muscle mass actually increases your metabolic rate, building muscle through weight training increases your caloric burn, says Alberty Matheny, C.S.C.S., R.D., and co-founder of SoHo Strength Lab. To increase your muscle mass, he suggests doing three to four sets of exercises like bicep curls, triceps pull downs, squats, lunges, bench presses, and upright rows. Perform eight to 12 reps per set, taking a 45 to 90 second breaks between sets. Tackle this sequence three times per week and increase the weight and sets to keep making progress as you get stronger, he says.
